• There have been two contrasting stories this week which nicely demonstrate the polarised nature of the hotel F&B space. On the one hand, The Sanderson, one of the elder statesmen of London's design hotel scene, has appointed Barry Tonks as head chef of its restaurant. Tonks has previously worked at The Dorchester as well as L'Odeon under Anthony Demetre - a fine dining pedigree if ever there was one.
And heading in the other direction, hospitality ePOS provider Lightspeed has announced the full integration of its products with Deliveroo - a move which could potentially offer an additional income stream to hotels, essentially allowing them to become providers of food deliveries to their local area.
Becoming a focal point of the local community is something which many boutique hotels aspire to, and offering guests the ability to live like a local is an oft-used marketing thread woven through many hospitality offers. Hotels now have the opportunity to flip that concept on its head, allowing locals to dine like hotel guests without leaving their homes.
